One of my childhood favorites

For years my Grandma Bader was the one who made these for everyone in the family. She had to make several batches because we always gobbled them up. I now appreciate how much work she went through. Wow! It is a long day to make these.

I haven't EVER worked with yeast before. So this was definaltey a learning curve. My first try was a pretty big failure. A combination of ineexperience, a misprint in the recipe and bad planning. See my second post for what I am going to call "out-takes". Second time worked out great though. I will continue to make these every year and continue on the family tradition.

Hot Cross Buns

4 cups milk

1 cup water

2 pkg yeast

2 tsp salt

1 1/2 cups sugar

4 eggs

1 cup shortening

3 cups raisins

zest from 2 oranges

1/2 cup mixed fruit (I like to use more)

3 tbsp ground cinnamon

(about) 12 cups of flour

Scald milk and sugar. Add shortening and salt. Set aside to cool.

Sprinkle yeast over lukewarm water to which 2 tsp of sugar has been added. Let stand 10 minutes.

In a separate (your largest) bowl beat eggs. Add cooled milk mixture. Add about 4 cups of flour and beat until it forms a smooth sponge. Add cinnamon to the rest of the flour. Add the orange zest, raisins and fruit along with most of the flour and stir until combined. Add more flour as necessary to form a soft dough.

Turn out on a lightly floured board and knead until smooth. Let rise about 2 hours in a warm spot.

Punch dough down and divide into 6 equal portions. Then divide each portion into 9 buns. Put into greased 8x8 pans and let rise again. This will only take about 1 1/2 hours. Be sure and check on them.

Bake at 375 for about 18 minutes until golden brown and firm.

RATINGS: Heather (Batch 1) - 4 - "OOPS" (Batch 2) - 10 "Yay, these are so yummy"
