Hello Everyone!
I guess I'll make my first post deceptive, by posting about cookies. With butter and sugar and all that heavenly goodness inside. In reality, most of my posts will probably be healthy stuff. I have not yet succeeded in the realm of healthy cookies, but these cookies have received rave reviews.
I'll be honest, it's not my recipe, but I'm going to take credit for it because out of my selected taste-tester co-workers plus the Husband, everyone loved them. :) And it's all because of me.
Oatmeal Cookies
1c butter, softened
1c white sugar
1c brown sugar
2 eggs
1t vanilla
2c flour
1t baking soda
1t salt
1.5t cinnamon
.5t nutmeg
3c oats (quick or regular, both work)
1. Mix sugar and brown sugar into softened butter
2. Beat one egg at a time into the mixture, plus vanilla
3. Combine flour, baking soda, salt, cinnamon and nutmeg in another bowl
4. Mix dry ingredients together, then stir into the wet mixture
5. Stir in the oats
6. Cover and chill for one hour
(t = teaspoon)
Bake in pre-heated 375* oven for 8-10 minutes
Eat.

I felt too guilty when I went back and looked at how cute and creative the pictures are, I had to give credit somewhere. :)
