Brad and I try to make a good breakfast one day each weekend. Waffles are one of our favorites. When I first came across this recipe for Buttermilk Waffles, page 42, in EDF issue #55 (September 2008) we had to go out and buy a waffle iron* just so that I could try it. I make this recipe A LOT. I love the recipe because unlike most waffles recipes it isn't labor intensive (no beating egg whites separately and folding) and it uses up more of that 1L carton of buttermilk that I bought to make bran muffins with (maybe I will get to that project soon)! I usually make half a recipe for the two of us but I have made a whole batch and frozen the extras (Brad just pops them in the toaster for breakfast during the week).
Today I have decided that I am going to cheat and post a link to the recipe but I will list the ingredients.
Buttermilk Waffles
flour, sugar, baking powder, baking soda, salt, buttermilk, unsalted butter, eggs
The recipe link also includes four topping recipes. Today we had a lightened version of the berries-n-cream topping (we substituted vanilla yogurt for the whipped cream).
