Chocolate Nests

as adapted from the cookbook "Easter Cooking" by Usborne.

1.5 cups choc chips
1/4 cup butter
2 T Corn Syrup
4 cups cornflakes
mini eggs

1. Put 12 muffin cups into pans in the muffin tray.
2. Add choc chips, butter and corn syrup to med size pot.  Heat on low until melted and smooth, stirring often.
3. Turn off the heat.  Add cornflakes to the pan. Gently stir until coated all over.
4. Fill baking cups with the mixture.  Using the back of a  teaspoon make a hollow in the middle of each nest.
5. Arrange 3 mini eggs in each nest.  Refrigerate and leave about an hour to set.
6. Take the nest out of the baking cups and put them on a plate.  Keep them cool until serving.

The results?

Mr. Picky was a fan.

Mr Picky's cousin, Mr. So-Serious was clearly a fan of his.  He even shared a rare smile with me!

Would I make these again?  Probably not.  They are cute but they are a little...much.  I think if you added some peanut butter to the chocolate they would be much improved.  :)
