Chunky Guacamole

I never used to like guacamole. This recipe comes from the Better Homes and Gardens Ultimate Mexican 2010 magazine. Everyone who tried it says that it is the best they have ever eaten. It is super fast to make and now I often make it for an appetizer on Friday afternoons.

CHUNKY GUACAMOLE
2/3 c chopped tomato
1/4 c sliced green onions
2 tbsp lime juice
1 tbsp olive oil
1 clove of garlic, minced
1/4 tsp salt
1/8 tsp fresh ground black pepper
2 very ripe avocados, mashed
Stir all ingredients together. Keep the pits and put them in the bowl with the mix. It keeps it from going brown and it REALLY works! Refrigerate for up to 1 hour.
