Spanish Rice

This recipe is originally from the Purity Cookbook. I use it as a guideline depending on what I have in the fridge.

Make a batch of rice. I use 2 servings per person.

Chop us some veggies. This time I used onions, orange peppers, yellow peppers, celery and mushrooms. Saute in small amount of olive oil in a large pan.


Season with salt and pepper and add some leftover cooked sausage.


Stir in a large can of (the best you can find, I use my mom's homemade) diced tomatoes and the cooked rice. Simmer for 15 minutes.


Serve in the great new bowl you bought at Homesense.
