Lemon Zucchini Bread made by Melanie

I found this one in my binder of recipes that I have printed off.  I had actually held onto this recipe since 2008 and had never made it.  LOL   Anyway - found this on a website called http://www.allrecipes.com/    In fact, it's still there and here is the link: http://allrecipes.com/Recipe/Lemon-Zucchini-Bread/Detail.aspx

This mixed up well and smelled great coming out of the oven.  Clearly I didn't grease my pan well enough because this is what happened when I removed it.



Sigh


But I figured that it was like cutting your finger - stick them back together fast enough and they'll stay together.



Rather than try this one out on my family I thought I'd bring this to work and let the masses decide.  Myself - I wasn't all that impressed.  I found it to be a little bland and in need of some mini chocolate chips.  My opinion proved to be the minority.  Mrs Smith, my co-worker fell in love with the loaf and kept sneaking more pieces when I wasn't looking...and when I was.  Other co-workers also took a piece and said it was good.  Finally another co-worker grabbed the remainder of the loaf from the lunch room and took it home with her.  I guess that is a good sign.  Considering 220 people have reviewed this recipe on the website since it was posted and that it's average rating was 4.5/5 - I think it's a safe bet.

Melanie, Next time cut a piece of parchment paper the size of the bottom of the loaf pan. Stick that in as well as greasing the pan and you will get a perfect loaf!

Ha ha ha, loved the comment about sticking it back together.
