Oven Roasted Chicken...

I was picking up a new book to read at the library when I spied with my little eye a cookbook called "Real Simple: Meals Made Easy".   Since it sounded like my cup of tea, I signed the book out.  I loved that the book had pictures of every recipe in it.  I'm a big fan of pictures.  :)

Last weekend I tried their Oven Roasted Chicken. 
Keep in mind that I have never roasted a chicken.  That belongs in the category that pie is in....scary things that only Moms cook.  Despite the fact that I am a Mom, I am excluded from that group.  It's also a part of "too scary to even contemplate cooking" group.   So let's being by saying that the whole idea of making a chicken was terrifying!!!   Because I am such a sucker for a good picture though, I had to give this one a try.

I was so wrapped up in what I was doing that I forgot to take a lot of pictures of what I was doing but a couple of them made it through...

Just before I tossed it in the oven I stared skeptically at it...what I was doing trying to cook a chicken??

Oh, but then we ate it.  It was tender, juicy and had the tastiest skin.  I know you should peel it off, but how can you when it tastes THAT good?  My son, Mr. Picky - ate 3 helpings of chicken!!!   My daughter who usually turns her nose up at all meat - turned her nose up at this too.  LOL!  My husband, who is not a big fan of chicken made this way, gave his somewhat reluctant approval as well.  This one will be made again.  Yum!
