Parker's Beef Stew

This weekend I gave the Barefoot Contessa another test.  This time I tried "Parker's Stew" which involved marinating all the meat overnight in red wine and spices.

Then of course, add bacon!

Next step...brown the meat with flour and spices....


Then add some veggies and put it all together



Whip up some sauce using some of the boiled marinade and various other ingredients and then bake for 2 hours.   This recipe called for 9 cloves of garlic overall but I just couldn't bring myself to do it.  As it was, I thought I was being quite brave to use the 6 that I did.  As the soup baked, my eyes watered!!  DH came up from working in the basement only to cough and open all the windows in the kitchen. 

As the stew came out of the oven I made sure to have the pizza delivery phone number handy and took a tentative bite after taking this picture:



It really turned out quite tasty and not at all too garlic-y!!   All in all , this recipe had some good points - things that I would like to try again but I would combine other aspects of my current stew recipe too.  Maybe that will be another entry down the line....

Another plus, I didn't cut myself or burn anything.  I did make an awful mess in the kitchen though...should have taken that picture....

The recipe sounds good, except for all the garlic. I think I would use even less. It looks really yummy though....now I'm hungry!
