Ingredients
- 12 whole New Potatoes (or Other Small Round Potatoes)
- 3 Tablespoons Olive Oil
- Kosher Salt To Taste
- Black Pepper To Taste
- Rosemary (or Other Herbs Of Choice) To Taste
Preparation Instructions
Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender.
On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato.
With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with more olive oil.
Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.)
Bake in a 450 degree oven for 20-25 minutes until golden brown.

These were good. Despite her insistence to add a lot of salt, I guess I didn't listen enough because they needed salt. :) I think I was the biggest fan of these. I like potatoes crisp like this. Husband of Cheerios thought they were fine and would eat them again but aren't his favorite way of eating potatoes. Mr Picky declared them to be "very yummy". Miss Almost Vegetarian said that "while I was chewing the bite it was very yummy but then turned very yucky". This isn't surprising. She just doesn't like potatoes. I don't think she is really my daughter.
We will make these again.

Oh, I love Pioneer Woman recipes although they are usually so high in fat and calories...oh well, that's what makes them yummy, right?
You should try the Pioneer Woman Chicken Parmigiana. I make it in big batches and freeze it (chicken and sauce). All hubby has to do is thaw it out and boil spaghetti on the nights when I work. It's yummy.
