or in the summer 2011 issue of What's Cooking
What You Need
1/3 cup butter
1/3 cup Kraft Smooth Peanut Butter
1/3 cup packed brown sugar
2-1/2 cups quick-cooking oats
1 pkg. (170 g) Back to Nature Trail Mix - Raisins, Almonds, Pumpkin Seeds, Pecans and Apricots (I used a different Back to Nature Trail Mix)
Make It
HEAT oven to 350ºF.
MICROWAVE butter and peanut butter in large microwaveable bowl on HIGH 45 sec. to 1 min. or until both are completely melted; stir until well blended. Add sugar; mix well. Stir in oats; spread onto bottom of 17x11-1/2x3/4-inch pan.
BAKE 20 min., stirring every 5 min. Cool.
ADD trail mix; mix lightly.
I did not try this one out on Mr Picky or Miss Almost Vegetarian but I did give Mr Cheerios a sample. Mr Cheerios is not a fan of granola so his response wasn't much above a grunt. I thought it was tasty but not the best granola that I have ever had. I also gave some to my co-worker Mrs Smith and another co-worker Mr Sven Zen. They both said that they enjoyed it but I didn't sense that they were in love with it either. Final thought - it's good...but I will likely not make it again.
