Frosted Banana Bars

From the Taste of Home Cookies Cookbook:

1/2 cup butter, softened
1 1/2 cups sugar
2 eggs
1 cup sour cream
1 tsp vanilla
2 cups all purpose flour
1 tsp baking soda
1/4 tsp salt
2 medium ripe bananas, mashed (about 1 cup)

Frosting:
1 pkg (8 oz) cream cheese softened
1/2 cup butter, softened
2 tsp vanilla extract
3 3/4 to 4 cups confectioners sugar

In a large bowl, cream butter and sugar. Add the eggs, sour cream and vanilla. Combine the flour, baking soda and salt; gradually add to the creamed mixture. Stir in bananas.  Spread into a greased 15" x 10" x 1" baking pan (I used a lasagna pan).  Bake at 350 degree for 20-25 min (it took about 35 min with my pan/oven combo) or until a toothpick inserted comes out clean. Cool.

For frosting, in a large bowl, beat the cream cheese, butter and vanilla. Gradually beat in enough icing sugar to achieve desired consistency (I used almost the whole 4 cups). Frost the bars. Store covered in the fridge.   (we iced them with ALL the icing and it was thick)

Mr Picky liked the banana bar part but thought the icing was just ok.  Me, my husband and Miss Almost-Vegetarian LOVED these.  I also brought a container full of them to work and they received rave reviews there too!!  These were amazingly yummy and they will be made again!!
