Italian Potato Pancake

This is my first submission so I am not sure I am doing this right. Here goes ....


This recipe is taken from the magazine "Taste of Home" Aug/Sept 2001. I have a stack of these magazines in my cupboard and before I take them to recycling, I decided to go through the recipes again. This one seemed easy enough to do. The caption beside the recipe read "Seasoned with basil, oregano and sprinkled with mozarella cheese, this potato pancake variation is almost like an Italian Potato patty."


1 medium potato, peeled and grated

2 tbsp. chopped onion

2 tbsp. whole wheat flour

1 egg

1/4 tsp. dried basil

1/4 tsp. dried oregano

salt and pepper to taste

shredded mozzarella cheese


Rinse potato in cold water; drain thoroughly. In a bowl, combine potato, onion, flour, egg, basil, oregano, salt and pepper. In a skillet, heat oil, add potato mixture. Cover and cook over medium/low heat for 5-7 minutes or until golden brown. Turn, sprinkle with cheese. Cover and cook over low heat 5 minutes longer.


Yield 1 serving.





Out of a rating of 10, I rate this one as a 5. It was easy enough to make but the flavor just wasn't there. I used a large potato instead of a medium so that could have something to do with it. It was way too much for one serving so I ate the rest the next day. It tasted better cold. Ewald wouldn't even taste it!

I wonder if Ewald will taste any of your experimental recipes. LOL!
