Garlic cheesy bread

Mmmmmmmmmm nom nom,

So barely a recipe but you know those times when you just don't know what to put in a kids lunch? Well....
So I went and bought a ball of frozen dough (from sobeys), stretched it out Italian pizza man style, then I melted 2 tbsp of salted butter with 1/2 tsp of garlic powder (could not find the fresh garlic for the life of me). Then I slapped a biggish handful of cheese on it (I had only Tex mex shredded cheese so that's what went on!) stick it on a hot pizza stone (pampered chef....love!) for 9 mins and I may die from the yummy smells in here, Lord... Please don't let me eat this all, please remind me it's for my children's school lunches...

Pumpkin chocolate chip breakfast to go muffins

Phew that's a mouthful!  I made these today for my daughter who loves everything pumpkin, she also loves quick easy breakfasts she can grab on the way out the door.  So you know, Pinterest isn't always all it's cracked up to be, sometimes the recipes work, sometimes I think people just like to mess with you.  The recipe is weird, the batter is weird but the verdict is good!!  Daughter ate one for dessert at supper and begged for a second.... That's a good sign right?? So instead of re-writing the recipe I decided to just link you to the page I got it from!

Ok so I got the name wrong, but hey, you get the picture!! Lol

Fresh apple cake

I've made this cake several times, now at the persistent begging of my super picky little boy.  To get the real picture, he begs for this more than birthday style cake and this cake doesn't even have icing!!!

The best part about this cake is that it's not overly sweet, and the flavour changes a bit depending on the type of apples you use.  I'm posting a messily written recipe so excuse my writing but I would like to add that I am thinking I will use more cinnamon next time, just to bump it up a bit.  Also I will mention I tend to use gala apples to make this cake... Why? I dunno, I like them that's why!

Best of Bridges Honey Mustard Chicken

3 lbs chicken pieces (we used thighs)
1/2 cup liquid honey 
1/4 butter, melted
1/4 cup Dijon mustard
2-4 tsp curry
Pinch cayenne pepper

Place chicken in a single layer in a large ovenproof dish. Combine remaining ingredients and pour over chicken. Bake uncovered at 350 Fahrenheit for 20 minutes basting once. Turn pieces over, based again and bake another 20 minutes or until pieces are no longer pink inside.


Husband-of-Cheerios made this and when he saw the ingredients list, wondered why I picked it. He knew no one would like it.

When I saw it come out of the oven, I got ready to order pizza. It was not pretty.


It was DELICIOUS !!! Even Mr Picky liked it and he hates mustard!!! So so so good. Will definitely make again!

This was delicious!! Very much like the Olive Garden version. 

I will definitely make this again but will make it a little less thick - it's a very hearty soup.

Was not a big fan of this one. I made it when I was the only one home. I'm a big hoisin fan and love udon noodles. I just found this to be way way too salty.

I would not make this again.

Fluffy Pancakes

Found this recipe on Facebook and had to try it out.

I am the only one who tried them but since I rarely eat pancakes , I can't really comment on the taste. They tasted like a pancake. They were however very fluffy.







Irish Hills Cupcakes

Mine are definitely not as pretty as hers were but they were absolutely divine. They were so good that as soon as the first batch was eaten, I made more so that I could bring them to work. So so delicious!!! 

Swedish Meatballs

I was having a huge craving for meatballs and this recipe came up on google with lots of good reviews


Sadly we all just thought it was "meh" and did not provide the flavor we were looking for.  Maybe we should have had them with lingonberry sauce.

Apple Crisp

Well it's been an awful long time since I have contributed to this blog!  Time to get on it!  I made this apple crisp last night for a potluck and it went so fast I barely got a piece!!  Unfortunately I didn't get time for a picture of it all nicely done but here is a picture of what was leftover lol!!

Apple Crisp:


10 cups of all purpose apples (I used macintosh), peeled, cored and sliced
1 cup of white sugar
1 TBSP flour
1 TSP ground cinnamon
1/2 cup water


Crumble:

1 cup quick cooking oats
1 cup of flour
1 cup brown sugar, packed
 1/4 TSP baking powder
1/4 TSP baking soda
1/2 cup butter, melted

Instruction:

Preheat oven to 350 degrees F

Place all apples in a 9x13 pan, mix white sugar, 1 tbsp flour, 1 tsp ground cinnamon and sprinkle over apples.  Pour water evenly over all.

Combine oats, flour, brown sugar, BP, BS, and melted butter.  Crumble evenly over apple mixture.

Bake for 45 mins.

Peanut Butter Chocolate Banana Cream Pie....oh yes, you read that correctly.

ACK!!! Be careful when you make this dessert, people may attack in order to get it away from you. Dangerous stuff!!  Also DO NOT, under any circumstances, make this while you are alone!!!  You WILL attempt to eat it all!!  I made this for a potluck dinner and just like the apple crisp it went FAST.... so AGAIN, this bad picture taker only got a pic of what was leftover.  SIGH!!! and I did such a good job on decorating it!! Oh well, it really only matters how it tasted and that was OMG.... yup, OMG, not sure what else to say....OMG  did I say that yet?

Peanut Butter Chocolate Banana Cream Pie


Ingredients:

35 vanilla wafers, finely crushed (about 1 cup)  (I used Nilla cookies)
1/4 cup butter melted
2 oz bakers semi sweet chocolate, divided (I used a handful of chocolate chips)
1/2 cup creamy peanut butter, (I used natural peanut butter just to take down the sugar content a bit)
2 bananas cut in half length-wise (I used 4 to make sure it covered the crust)
2 pkg (102g) vanilla instant pudding
2 cups cold milk
2 cups Cool Whip, thawed, divided
2 Tbsp salted peanuts coarsely chopped

Directions:

Heat oven to 350 degrees F

Mix wafer crumbs (I crushed them in a ziplock bag by rolling over them with a rolling pin) and butter until blended and press into a 9 inch pie pan, bake 5-8 min, or until golden brown. Cool completely.  Meanwhile, make chocolate curls from 1/2 oz chocolate.

Microwave remaining 1 1/2oz chocolate and PB 30 seconds, stir if not smooth repeat for another 30 seconds until mixture is smooth.  Place bananas in crust; drizzle with melted chocolate.

Beat pudding mixes and milk in a large bowl with whisk for 2 mins.  Stir in 1 cup Cool Whip.  Spread over bananas; top with remaining cool whip.

Refrigerate (IF you can fight off the masses that long) 3 hours.  Top with chocolate curls and chopped peanuts just before serving.

I highly suggest wearing riot gear while serving, it can get violent!!

Eat more Bars

3/4 cup honey
1 cup peanut butter
10 reg size marshmallows
1 cup Choc chips
1 cup peanuts
3 cups Rice Krispies

In a large pot Bring honey and peanut butter to a boil over medium heat. Stir constantly.

Add marshmallows and chocolate chips, stirring until melted.

Remove from heat and stir in peanut and Rice Krispies. Press into a 9x13 pan. Cool.


These are simply amazing. I brought them to Christmas and they were a huge hit!

Even Skelly got into them....

French Dip Sandwiches

As adapted from April 2014 Food Network Magazine

French Dip Sandwiches

3 scallions
2 tsp fresh thyme (I used dried)
1 clove garlic crushed (I used more - minced from a jar)
Kosher salt and ground pepper
1/4 tsp celery seeds
1/4 tsp ground allspice 
1 - 2.5 pound beef eye round roast, fat trimmed
2 carrots sliced 1 inch thick
2 T Worcestershire sauce
1 cube beef bouillon
6-8 kaiser rolls
Horseradish or spicy mustard for serving

Pulse scallions, thyme, garlic, 1 tsp salt, 1 tsp pepper, celery seeds and allspice to make a paste. Pierce the roast all over with a paring knife. Rub the paste into the meat. Tie the roast with kitchen twine so it keeps its shape.

Spread carrots in a slow cooker. Put roast on top. Insert thermometer into roast's center so you can read it through the glass. 

Combine 1.5 cups water, Worcestershire sauce and bouillon cube in microwave safe bowl. Microwave 2-4 minutes until hot. Add to slow cooker. Cover and cook on low until meat is 120-130 degrees for medium rare, about 2 hours.  Transfer meat to a cutting board and cover with foil - rest 15min. Skim excess fat from liquid.

Slice meat thinly. Spoon liquid onto cut sides of bun, sandwich with meat and serve with mustard or horseradish. Serve more liquid for dipping.


The kids were away when i made this.  Husband of Cheerios and I both felt the same about this. It smelled great and tasted boooooooring. Very disappointing.

We will not make this again.

This was really good...
You will have to take my word for it because I'm the only one who tried it. This was the 4th recipe from this cookbook that I've tried and the first one I really loved. I will make this again.
